What Veggies are high in carbs? I love squash and brussle sprouts, go through phases when I want a lot of salads. Baked and mashed potatos -- Yumm... Guest guest Posted January 8, 2003 Report Share Posted January 8, 2003 You know, when I went on the Carnival cruise during Thanksgiving, I went to a class about nutrition. The instructor said that spinach was a carb and that you could get fat by eating spinach. I know technically she is right, but I would have to be a cow mowing the lawn to eat enough spinach to get to 370 pounds!! I don't woory about some things. Spinach, squash, brussel sprouts...they are all vitamin and nutrition dynamoes. There is now way I am going to get fat from an overdose of veggies. Potatoes are iffy. I go by the rule of thumb, it's not the potato, it's what you put on it. I don't mind a potatoe with homemade chili and f/f sour cream. Yummy!!!! But there are better choices. Speaking of potatoes, have you tried oven fries? Slice the potato lengthwise into about eighths for home fries. Put on a baking sheet, Spray with Pam. Sprinkle on garlic salt, onion salt, lawry's, chili, paprika, anything you want, and bake. Yummy!!! It's just that some are complex carbs (takes longer for them to break down, burns more calories in the process) while others are simple carbs (turns to sugar faster). Your starchy vegetables like corn, peas, and potatoes are your simple carbs. Although they are important nutritionally (potassium, vitamins, etc.) they should be kept to a minimum. Guest guest Posted January 8, 2003 Report Share Posted January 8, 2003 Rick, My sister had a distal RNY over 11 years ago, she maintained and then had a bowel obstruction, twice, lost intestine both times. She had been underweight, struggled to maintain and even add some weight. She was even put on Ensure at one time. In the last year she has began putting on weight, not major amounts, just enough so that she doesn't look ill. I hate to say this, but I'm kinda envious of you people that have had BO's and had to have more intestine bypassed. Simple rules for " simple carbs " ........RUN, RUN like the wind, do not look back, do not pass go, do not collect 200 dollars!!!!!!!! Treat them like the vermin they are. Shake the dust off your feet and have nothing to do with them!!!!! They are Satan's tool!!!!! OK, now if that didn't get the point across!! Simple carbs are basically the stuff you think of as JUNK, cookies, candy, chips, even juices, etc. Now complex carbs are another story. They are your veggies, some fruits, and (some people might argue) that there are some serious breads that could possible be used wisely. It really takes label reading and your own experiences as to what you can tolerate mentally as well as physically. Personally, I cannot do any simple carbs without starting something......and generally regretting it. P.
