hey folks, while going through the archives, i found one of Toi's

posts. check it out:

" These two foods have been my favorites

on the grill for a long time

and especially now, since they are WLS

friendly...

Keep in mind that all measurements are

approximate as I RARELY use

measuring cups or spoons. I make

everything by eye and my husband

and son agree that I am a DARN GOOD

cook, lol. --- they have to say

that or they don't eat.

Chicken Marinade

2 cans diet 7-up (or equivalent brand)

1/2 c soy sauce

2 tsp garlic powder

1 tsp horse radish powder (sauce or

mashed work ok also)

Combine marinade ingredients in a large bowl and add

4-6 chicken

breast halves. Cover tightly and allow to marinate for

approximately

6 hours (since my surgery I try to do it longer so

that it will get

even more tender).

*The 7-up may sound weird, but its the carbonation in

the soda that

tenderizes the meat and the flavor is delish. Not too

sweet at all

since it is balanced out by the soy sauce.

Remove chicken from marinade and lightly brush both

sides of each

breast with olive oil. Cook on med-high grill and

ENJOY!!!

Grilled Zucchini

1/2 cup olive oil (extra light virgin)

2 tbs Mrs. Dash Original (my main herb and seasoning

staple)

4 med zucchini

Pour the olive oil in a small cup and mix with Mrs.

Dash. Cover bowl

and let oil infuse with the seasoning for a couple

hours.

Slice zucchini lenghtwise or at a steep angle and

brush each side

with infused oil making sure to get plenty of the Mrs.

Dash on each

side. Place zucchini on grill and turn over when one

side is browned

and shows grill marks (really depends on if you like

your veggies

well done or firm (since surgery I handle mine better

well done)).

Eat, eat, eat.
