How long to wait for yogurt to set?

Do you really have to wait the full 8 hours for the yogurt to set?

Mine is in the fridge and I really want some!

The eight hour setting time in the fridge gives it a firm texture. When you

taste it earlier it

can be kind of mushy but it has already been properly incubated to foster the

good

bacteria.

And if and when you drip it through a filter or cheesecloth (takes another few

hours) it's a

combination of velvet and satin!
