Just remembered one more thing! After mixing the enzymes and icing, I form it

into a pancake and stick it into the freezer. Then I wait awhile before cutting

into 16 sections and rolling each in my hand into a little ball. The " dough " is

easier to work with (less sticky) if it is slightly frozen.
