They do use Two slicers and everyone is taught and required to do just that. They also sterilize the slicers 3-4 times per day. Just happened to break right as I got there and not a usual occurance. Last October...I called Nature Ways Vitamin to ask if one of their products was " gluten free " ....they said it was...later I discovered that it wasn't!...this vitamin put our infant Celiac/gluten allergy daughter in the HOSPITAL....so BUYER BEWARE! Elaine encouraged people do their own research for those things that are needed, and not covered, by not only contacting companies, but getting a statement on letterhead by them. Of course, food constantly changes, so you have stay ontop of it. It has helped me, where I live, finding a co-op that provides information and yearly GMO status on all the companies they sell products from. Still not easy sometimes in the supplement arena. Another thing that has helped, when ever you start a supplement, SCD approved or your own approval, go slow, do not introduce any other new foods for a couple of weeks, this way you can gauge for undeclared illegals and see if there is any benefit to the product. Whole Foods refused to carry Elaine's book por allow us to do a cooking demo using the book because iut doesn't come from their list of favored publishers. Don't get me wrong as there are many things I like there that I know I can use. Their employees are not familiar with the diet. They deal with a gazillion kinds of food protocols. It is our responsibility to contact the companies and get the ingredient list sent by mail for proper verification. The cheese department is OK with telling you ingredients and aging time.
