My favorite so far has been wild-caught Mahi Mahi marinated thoroughly in lemon

juice for at least 12 hours. It will appear white as if it had been steamed.

Then I rinse it, dry it on paper towels by pressing the juice out. Then I rub

it with lemon pepper and wrap it in a clean dry paper towel to cure for a day.

I have done the same routine with wild-caught salmon and Ahi tuna, except I used

apple cider vinegar. It seems to dry the fish out more, so I will probably

stick with the lemon juice. I am experimenting with a *sourdough* raw bread

made of pureed avocado with a fine raw, soaked and dehydrated then milled nut

flour (yes, I do it myself to know what has happened to the food before I eat

it). A tad of your favorite sour-tasting spice (lemon pepper, raw apple cider

vinegar and such) to give it a spark.

Then about 8 hours in the dehydrator makes a kind of guacamole bread which goes

well with the raw (but pre-digested) fish. Not bad. The fish can be warmed

slightly (not in the microwave) at about human body temperature or a bit higher,

because it is kept refrigerated, of course, even after curing.

Hey, I gotta try that with my fermented milk. Hubby has volunteered to visit

the goat raw milk farm for me. As of now, I am using cow's milk. How do you

*drip* yogurt?

Actually, on the raw diet email lists that I tried, they were eating all kinds of sprouted wheat, corn and stuff that we cannot eat. That is why I found my way here.Oh! I never knew that. Well, I may have at some point, but I havent really explored in the raw community for a while. I have been reading up on raw food living for when my gut is healed. One thing I came across from the GAPS list is to not mix coconut products with probiotic products because coconut is a strong antibacterial and will destroy the good bacteria in the yogurt. So, they should not be taken together.

I was making a hot pink smoothie that used coconut water and then I was adding the yogurt which makes it so creamy, but was told the info about not mixing it.

Hi Betty..

I am pretty skeptical about the properties in coconut oil killing the

probiotics. I think the antimicrobial properties in coconut work differently

than regular-anti fungals. I have to look into this more.

Hi Ann,

I will post Marilyn's instructions for dripping yogurt in the next post!

I would love to use raw goat/sheeps milk. It is illegal for me to buy raw milk

in NYC (NY State actually) this state has some pretty backward laws also when it

comes to health stuff.. like certain Candida testing in blood serum is no longer

legal Bleh.

Too bad! We live in the Sacramento Valley and have certified dairies that place

their products in the health food stores; then we have the local health nut

small producers that sell their milk. It is not illegal here. Hey, when we

vote for legalizing pot, how can we balk at raw milk? ;-)
