Guest guest Posted December 22, 2003 Report Share Posted December 22, 2003 For those of you who can't tolerate acids, you can substitute pureed pumpkin for tomatoes in soups or stews. You will not taste the difference, but pumpkin doesn't sting your mouth or bother your stomach. Just make sure when you buy a can of pumpkin that it's not spiced for pumpkin pie - that you'll taste! Anyway, just mix a scoop of pumpkin with beef or chicken broth and maybe some seasonings (I like thyme and bay), and then add whatever it is you put in your soup and cook it all together.
