Guest guest Posted January 8, 2004 Report Share Posted January 8, 2004 Eggs, beans (I like refried beans with cheese melted on top), soup, oatmeal with bananas, chili, souffles (I found a great spinach one in the grocery store that was really yummy), rice (I made a delicious Thai coconut rice with black beans and vegi's the other day), couscous with soft vegi's, soft vegi's (cooked peas, carrots, spaghetti squash) and fruit (applesauce, soft pears, bananas, etc.) - oh there are so many good things - just try flipping through a cookbook or take your time in the grocery store going down every aisle - I always find something new (I tried a new and yummy vegetarian vegi loaf with mashed pototoes and corn/peas yesterday for lunch)! > I am sick to death of eating noodles, tuna, grits, soup and > spaghetti. Guest guest Posted January 8, 2004 Report Share Posted January 8, 2004 Soft foods from my dairy-free household: Peanut butter balls: 1 cup peanut butter 1/2 cup honey 1/2 cup instant milk (still powder - I use a non-dairy 'milk' powder) 1/2 cup something dry, like oatmeal, wheat germ, crushed cereal. Mix up and either press into a pan or roll into balls. In the fridge it firms up, left out it gets very soft and gooey. It mushes very well with the tongue, and is good for protein. Mashed taters a la Kris: Saute onions and garlic until slightly browned (or very browned, depending on how you like them.) Toward the end add a slice of sweet pepper if you like it. Either chop fine or blend. Mix into mashed potatoes with a little chicken broth and a scoop or more of horseradish SAUCE. NOT prepared horseradish, which is hot. The sauce tastes like zippy mayo - you can use mayo instead if you want. Kris' famous chicken salad: Run one boneless, skinless cooked chicken breast through your food processor until very fine. Run 1-2 dill pickles and half a raw onion through food processor as well. Stir together and add just enough mayo to moisten (or more if you need it to slide down.) Seasoning: 2 TBSP dill SEED (not weed), crushed 1 TBSP celery seed 1 TBSP dried mint (I use peppermint tea, which has no other ingredients) Mix together and sprinkle on, a little at a time, until it gets to where you like it. I think, though, that until your incisions heal you're not supposed to eat seeds. I don't know how crushed they have to be before they're OK. People who swear they hate chicken salad love this. I get requests for it. I make sandwiches of it, but if bread isn't going down, you could probably eat it straight. If you want any more suggestions with particular foods in mind, e- mail me.
