I have used sugar free bacon with nitrate for five years on an almost daily

basis. I try not to

use many other products with nitrates because who needs too many chemicals? As

to

ham, I use thinly sliced Prosciutto from Italy which comes in a whole piece to

the

supermarket deli.. The only ingredients are pork and salt. Could you bake that?

Yes, sodium nitrate is SCD legal.

taste good. What is the best way to prepare this ham? Its 16lbs, I

I soak salted ham and cover with legal mustard, stud with whole

cloves and sometimes cover with slices of pineapple.

Hi ,

I live in Canada and use Maple Leaf 33& 1/3 less salt bacon - less

salt and no sugar :)

Sheila re the second post:

The ingredients are : ham with water, hone salt, potassium, chloride,

sodium phosphates, sodium erythorbate, sodium nitrate, spices extractives.

Not thrilled about the nitrites >>>

In this case I would not be thrilled about the " spices and extractives. "
