I ended up with something caramel like from my failed > attempt at the vanilla candy in BTVC (I added ghee after it didn't > freeze hard), but I'd love an " official " type of recipe. :-) Lynda's Famous Caramel Icing 1 cup honey 1/2 C butter 5 tbsps yogurt (I use dripped yogurt, if avoiding dairy nut yogurt might (?) work) Heat these ingredients to boil, stirring frequently (a heavy saucepan is best). Boil for 2 minutes ( I boil it a little longer if I want it thicker) Constantly stir to be sure ingredients are well blended. After 2 minutes take off burner. Add: 1/2 tsp vanilla 1/2 tsp baking soda The mixture will bubble up when these ingredinets are added. Stir well and let cool slightly before using as icing. I have put this in a fondue pot and served with cut up bananas, apples and other fruit. Everyone loves it especially the kids. here's another http://www.scdrecipe.com/recipes/r_008_00304.php Sheila
