Guest guest Posted June 22, 2003 Report Share Posted June 22, 2003 Here is another taken from the same news letter Apple Crunch Muffins M,E,P,S,N free 3 cups flour 1 1/2 cups firmly packed brown sugar 1/2 tsp. salt 2 tsp cinnamon (divided) 1 tsp. ground ginger 2/3 cup shortening 1/2 cup quick oats 2 tsp. baking powder 1/2 tsp baking soda 2 tsp. baking powder, 2 T. water, 2 T. Vinegar mixed together 1 cup apple juice Preheat oven to 375 degrees. Line muffin tins with paper liners. Stir together flour, sugar, salt, 1 tsp. of the cinnamon, and the ginger. Add shortening; mix until crumbly. Put 2/3 cup of mixture in small bowl and mix in oats and remaining teaspoon of cinnamon. Set aside. Add baking powder, baking soda, and baking powder, water, and vinegar mixture to remaining mixture. Mix well. Add apple juice and stir until well blended. Fill each muffin cup 2/3 full. I had yet to find a muffin recipe that didn't stick to the muffin papers. Ethan, my 18 month old with multiple allergies, ate two of them.
