Here is another taken from the same news letter

Apple Crunch Muffins

M,E,P,S,N free

3 cups flour

1 1/2 cups firmly packed brown sugar

1/2 tsp. salt

2 tsp cinnamon (divided)

1 tsp. ground ginger

2/3 cup shortening

1/2 cup quick oats

2 tsp. baking powder

1/2 tsp baking soda

2 tsp. baking powder, 2 T. water, 2 T. Vinegar mixed together

1 cup apple juice

Preheat oven to 375 degrees. Line muffin tins with paper liners. Stir together flour, sugar, salt, 1 tsp. of the cinnamon, and the ginger. Add shortening; mix until crumbly. Put 2/3 cup of mixture in small bowl and mix in oats and remaining teaspoon of cinnamon. Set aside. Add baking powder, baking soda, and baking powder, water, and vinegar mixture to remaining mixture. Mix well. Add apple juice and stir until well blended. Fill each muffin cup 2/3 full. Top with oat mixture. Bake 15-20 minutes or until toothpick inserted into center comes out clean.

I've never posted here, but I had to let you know I made these

muffins this morning. They turned out so good. I had yet to find a

muffin recipe that didn't stick to the muffin papers.

Ethan, my 18 month old with multiple allergies, ate two of them.

I will try to post an introduction soon.
