But then, for 7 years, I stayed 25 lbs heavier than I am by eating one salad per day only 5-6 days per week. My protein was grated cheese & 2 croutons. I'm amazed I had any organs/bones left after that. I'm morbidly obese by disease, not by poor food choices ALONE. And how much is poor food choice determined by the sour apple in my body? The more I read/see, the more I am convinced that insulin resistance is our #1 problem. Sending out false cravings. Insistent. Demanding. And for carbs. Before I discovered this stuff, the only squash that ever passed my lips was PUMPKIN, and then it had a crust and whipped cream, thank you very much... but a low-carbing friend turned me on to this and it really IS just LIKE spaghetti!! Tastes right, looks right, and it's a VEGETABLE even. It's not hard to cook, though it's a bear to cut the damn thing open. Shhhhhhh! Don't tell my three year old! I cut it in half and put a tsp of water in each half, then cover them separately and nuke them for 20 minutes or so until the squash comes out of the shells easily with a spoon. Sometimes I'll put butter, salt & parmesan on it. Other times, some tomato sauce & parmesan (I put parmesan cheese on almost everything . For an alternative to potatoes, take some spag squash, mix in some parmesan cheese (or cheddar, or any shredded cheese), an egg (to hold it together), some salt, pepper & whatever other spices you like. It should look like stringy mush (like potato pancakes). Drop them by spoonfuls into hot oil and cook them until they're crispy, then put them on paper towels. Salt them immediately when you put them on the towels, the salt sticks better then. You can dip them in tomato sauce, sour cream, whatever you want. They're delicious. You can do this with zucchini too. As for cutting the squash open - what a pain!! I have a beat up old knife that I use. I use a beat up old knife and one of those meat tenderizer hammers. I just bang on the knife until the thing is cut in half. You can do this with zucchini too. As for cutting the squash open - what a pain!! I have a beat up old knife that I use. I use a beat up old knife and one of those meat tenderizer hammers. I just bang on the knife until the thing is cut in half.
