Hi. I have 6 kids with Celiac and since I homeschool, they are always here, and we do lots of cooking. I will give you some ideas

of what I do. I shop at the local restaurant supply store for one thing, its much cheaper and buying in bulk saves money and time. I have a lot of mixes I keep on hand that I fix from scratch following Bette Hagmans cookbooks. I label all my flours in gallon ziplocks and when I make my mixes, I store them in new shoe boxes, the clear kind and label with permanent marker. I reuse any big containers I get from others, pretzel ones from Sams work well, I scrub it really good, but they are gallon size. I also use plastic containers from the dollar store to hold things in so its easier to pull them out of the pantry. Everything in our house is gf now. The baby has more allergies, soy,fruits,dairy...I try to make food thats safe enough for her, but its hard to deprive the others of the dairy, so I make look alikes, If they get nachos, Kari's is with rice cheese, her hot cereal is with rice milk, but it looks like everyone elses. Im trying to teach them not to share theirs with her, or else they can change her diaper;} I hope those ideas help. I also put a bureau in my pantry, works well for pans and such, rolling pins, we dont have much cabinets and I have a number of autoimmune diseases myself, so Im trying to make it easier. I do get my special flours at the local health food store. Take care. Lynne

That wasn't an option for us, since rice cheese has casein in it. I'm surprised being allergic to dairy she can have it, but then I've also heard being allergic to dairy doesn't mean you're allergic to casein, which I've never been able to figure out since casein is a milk protein. Shane can't have any dairy.

Thanks- I couldn't remember why Sam couldn't have the rice cheese- I

forgot it had casein! I kept thinking about why I didn't get any of

it! :) Just nice to know I'm not going crazy! ;)
