Many of the dairy/egg free cake recipes I have call for unsweetened cocoa or something along that lines....is there really dairy/egg free chocolate? So...I'm off today to find unsweetened! Thanks for all your help... ps...I found the parve symbol on the margarine I bought last night...it's a "U" inside a circle. I would call the company just to be sure regarding cross contamination though. Alyssa Chocolate? Neither of the big grocery stores I hit had the Unsweetened in Hersheys so I got a generic brand...seemed to do the trick. I made my practice cake & frosting and they turned out great. If anyone is interested the recipes I used are below. The frosting recipe was posted by someone in this group...don't remember who, but thank you! Easy & nummy! The cake recipe was found on www.allrecipes.com under the dairy free recipes. I made a couple changes to the cake recipe based on some of the reviews that were listed for this recipe. Vanilla Silk Frosting 3 cups confectioners (powdered) sugar 1/2 cup milk-free, soy-free margarine (softened) 3T water 1 tsp vanilla extract Mix all ingredients until smooth. Grandma's Eggless, Butterless, Milkless Cake 3 cups flour 2 cups white sugar 6 Tbs (I used 1 cup) unsweetened cocoa powder 2 tsp baking sodax 2 tsp baking powder 2/3 cup vegetable oil 2 cups water 2 Tbs distilled white vinegar 2 tsp (used 3) vanilla extract 1)Combine all dry ingredients in bowl together 2)Combine all wet ingredients in another bowl 3)Pour the liquid ingredients all at once into the dry ingredients and beat until smooth 4)Pour batter into greased 9x13 pan. 5) Bake in preheated 350 degrees F (175 degrees C) oven for 20-25 min. (I cooked for 40 and the center wasn't quite done..still somewhat wet. I will cook for 45-50 next time. Every review said the time was "way too short") Good luck! Thanks everyone! I've had to start a "special" section in my cookbook so I hope to increase the volume of that section!
