Guest guest Posted August 9, 2004 Report Share Posted August 9, 2004 Healthy Exchanges by Jo Lund Chunky Tomato Soup 1/2 cup chopped onion 1-3/4 cups (14.5 oz can) Swanson Beef Broth 10-3/4 oz can Healthy Request Tomato Soup 1 tsp JO's Italian Seasoning 1/2 tsp Worcestershire sauce 1-1/2 cups peeled and chopped fresh tomatoes 1-1/2 cups chopped unpeeled zucchini In a medium saucepan sprayed with olive oil-flavored cooking spray, saute onion 5 minutes or just until tender. Add beef broth, tomato soup, Italian seasoning and Worcestershire sauce. Mix well to combine. Stir in tomato and zucchini. Bring mixture to a boil. Lower heat and simmer 5 to 6 minutes or until vegetables are just tender, stirring often.
