Guest guest Posted July 13, 2004 Report Share Posted July 13, 2004 Chicken Meat Loaf Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb ground chicken 1 c crushed saltine crackers (about 24) 1/2 c minced fresh onion 1/4 c water 2 T minced green bell pepper 2 T ketchup 1 T Dijon mustard 1 t prepared horseradish 1/2 t paprika 1/4 t pepper Vegetable cooking spray Combine all the ingredients except cooking spray in a bowl, and stir until well-blended. Pack mixture into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350 degrees for 45 minutes or until done. Cut meat loaf into 12 slices. Yield: 6 servings (serving size: 2 slices).
