Guest guest Posted July 5, 2004 Report Share Posted July 5, 2004 MMMM ;-) Healthy Exchanges Jo Lund Cranberry Cornbread 1 cup yellow cornmeal 1/2 cup all-purpose flour 1/4 cup Sugar Twin or Sprinkle Sweet 2 tsps baking powder 1/2 tsp JO's Apple Pie Spice 1/4 tsp salt 1-1/2 cups chopped fresh cranberries 1/4 cup (1 oz) chopped walnuts 1-1/4 cups unsweetened applesauce 1 egg or equivalent in egg substitute Preheat oven to 350 degrees. Spray an 8- by 8-inch baking dish with butter-flavored cooking spray. In a large bowl, combine cornmeal, flour, Sugar Twin, baking powder, JO's Apple Pie Spice and salt. Stir in cranberries and walnuts. In a small bowl, combine applesauce and egg. Add applesauce mixture to cornmeal mixture. Mix gently just to combine. Pour mixture into prepared baking dish. Bake for 25 to 30 minutes or until a toothpick inserted in center comes out clean. Place baking dish on a wire rack and allow to cool. Cut into 8 thick or 16 thin slices.
