Guest guest Posted July 9, 2004 Report Share Posted July 9, 2004 Healthy Exchanges by Jo Lund Sombrero furter Chili 1-3/4 cups (15 oz) Swanson Beef Broth 2/3 cup uncooked elbow macaroni 1/4 cup diced onion 1-3/4 cups (14-1/2 oz) stewed tomatoes, coarsely chopped and undrained 2 cups reduced-sodium tomato juice 1 cup frozen whole kernel corn 8 ozs Healthy Choice 97% Fat Free furters, diced 1 tbsp JO's Chili Seasoning or any reputable brand 1/8 tsp black pepper In a large saucepan, combine beef broth, macaroni and onion. Cook over medium heat 10 minutes or until macaroni is tender. Add undrained stewed tomatoes, tomato juice, corn, frankfurters, chili seasoning and black pepper. Lower heat. Simmer 15 to 20 minutes.
