M Low-Work Turkey Soup Serves 8 4 turkey drumsticks 1 tsp onion powder 1 tsp garlic powder Sea salt Ground black pepper 1 (16 oz) bag of classic romaine or Italian salad greens 1/2 (16 oz) bag shredded coleslaw mix 1/2 cup uncooked long-grain rice Wash drumsticks; remove and discard skin. Place drumsticks in a large soup or stock pot. Cover with 8 cups water. Add onion powder, garlic powder, and salt and pepper to taste. Simmer over low to medium heat for 1-1/2 hours or more, until turkey is fork tender. Remove turkey from pot; set aside. Add salad greens, coleslaw mix and rice to broth. Simmer 20 minutes. Meanwhile, chop turkey meat into small pieces and add to soup.
