Guest guest Posted July 6, 2004 Report Share Posted July 6, 2004 Diabetic Fresh Peas with Tarragon peas 3 cups --- tarragon vinegar 1 Tbsp --- butter 2 tsp --- pearl onions 1/2 cup --- low-fat, low-sodium chicken broth 1/2 cup --- minced fresh tarragon 1/4 tsp --- Combine all ingredients except tarragon in a saucepan and cook over medium heat until peas and onions are tender, about 5-8 minutes. (Allow a little more cooking time if you are using fresh shelled peas.) Add the tarragon, toss lightly, and serve.
