She suggested the butter increase with almonds because the braz. nuts are much oiler. I did bake a couple of my pans to much and they didn't turn out as chewy but that was my problem not the recipe. Guest guest Posted February 17, 2006 Report Share Posted February 17, 2006 The cookie recipe with the almonds is as follows: 2 beaten eggs 4 cups of almond flour 2 cups of cashew flour 1 cup of honey 1 tsp of baking soda 1/8 tsp of salt 1/2 cup of melted butter (somewhat cooled) 2 tsp of vanilla extract bake at 325 degrees for 15-17 minutes. I wait till the most of the top of the cookie is a light brown. Cool for 2 minutes then remove from cookie sheet. I use unbleached parchment paper that I use over and over again for the entire batch. I have this handy 1 tablespoon cookie (like an ice cream) scooper I bought from Sonoma that really helps me make cookies fast. Its worth every penny. Hope you enjoy.
