Guest guest Posted August 14, 2004 Report Share Posted August 14, 2004 Scalloped Potatoes Serves 8 (1/2 cup) 6 medium potatoes (4 oz. each), unpeeled 4 cups water 1 tbsp olive oil 1/3 cup chopped onions 2 egg substitute equivalents 1 cup low-fat sour cream Fresh ground pepper 2 oz low-fat cheddar cheese, shredded Wash potatoes and place in a saucepan with water. Bring to a boil, lower the heat, and let potatoes cook for 25 minutes. Drain potatoes, let cool, and slice into 1/4-inch slices. Heat oil in a skillet. Add onion and saute for 5 minutes. Add onion to egg, sour cream, and pepper in a bowl and mix well. Lay potato slices in a casserole dish. Spoon sour cream mixture over potatoes. Top with cheese. Bake for 35 minutes at 350 degrees until top is browned.
