All American Pancakes

serves 4

1 cup sugar free maple syrup

1 cup cored, chopped, unpeeled apples

1 1/2 cups Aunt Jemimas reduced cal pancake mix

1 1/2 cups water

1/3 cup reduced fat cheddar cheese

2 tablespoons Hormel bacon bits

In a medium saucepan, combine syrup and apples. Simmer on low while

preparing pancakes. In a medium bowl, combine pancake mix, water. Then stir in

cheese and bacon bits. Using a 1/4 cup batter onto a hot griddle or skillet

sprayed with butter flavored spray. For each serving, place two pancakes on a

plate

and about a 1/2 cup of syrup-apple mixture.

252 calories, 4 gm fat, 13 gm protein, 41 gm carbs, 925 mg sodium, 342 mg

calcium, 6 gm fiber

Cheese-Corn Griddle Cakes

serves 6

1/2 cup yellow corn meal

3/4 cup reduced fat Bisquick

2 tablespoons splenda, 1 egg or substitute

1 tablespoon veg. oil (or canola oil)

2/3 cup skim milk

full 1/2 cup shredded reduced fat cheddar cheese

In a medium bowl, combine cornmeal, baking mix, and splenda. Add egg, oil

and skim milk. Mix gently just until combined. Fold in cheese. Using 1/4 cup

measuring cup, pour batter onto a hot griddle that has been sprayed with

butter flavored spray/ Lightly brown on both sides, serve at once. Good with

sf

syrup!
