Don Won's Pork and Peppers with Hoisin Sauce

2 tbsps reduced-sodium soy sauce

2 tbsps dry sherry (not cooking sherry)

1/2 tsp freshly ground black pepper

1 lb boneless top loin pork chops

4 ozs thin oriental-style noodles, (see note)

1/2 medium-large Spanish onion

2 large green bell peppers (or one each red and green)

2 large garlic cloves

1 tbsp peanut oil, divided

3 tbsps hoisin sauce (see note)

In a medium mixing bowl whisk together the soy sauce, sherry and black

pepper and set aside.

Trim all visible fat from the edges of the pork chops and then thinly slice,

across the grain. Place slices in soy mixture, turn to coat and set aside.

Place a 4-quart sauce-pan half filled with cold water over medium-high to

high heat and bring to a boil. Add noodles to boiling water, stir until soft

(about 15 seconds) and cook for 3 minutes. Rinse and drain in a small-holed

colander.

While water heats, peel onion, trim ends and cut lengthwise into thin slices

and place in small bowl. Core peppers, cut lengthwise into thin slices and

place in me-dium bowl. Press garlic through garlic press and place in very

small bowl.

Place a large, heavy-bottomed nonstick skillet over medium-high heat and add

1 teaspoon oil. When hot, add the onion and saute for 1 or 2 minutes until

just starting to soften. Add the bell pepper slices and saute for 3 minutes,

until beginning to soften. Push the peppers to the side, leaving the middle

of the skillet open. Put the garlic in the middle and cook for 30 seconds;

then stir into pepper mixture. Remove vegetables to a medium bowl, add the

hoisin sauce and stir to coat.

Add the remaining oil to the skillet, when hot add the pork and saute until

the meat just loses its pink color. Stir in the noodles and then stir in the

pepper mixture. Serve immediately.

Serves 4

Notes: an equal amount of thin-sliced chicken breast or flank steak may

be substituted for the pork. Look for hoisin sauce and oriental noodles in

the Asian aisle of the supermarket or Asian markets.
