Guest guest Posted June 18, 2004 Report Share Posted June 18, 2004 Healthy Exchanges by Jo Lund Pineapple Upside-Down Treats 1 cup (8 oz can) sliced pineapple rings, packed in fruit juice, drained, and 1/4 cup liquid reserved 2 tbsp Brown Sugar Twin 2 maraschino cherries, halved 3/4 cup Bisquick Reduced Fat Baking Mix 1/3 cup Sugar Twin or Sprinkle Sweet 1/3 cup Yoplait plain fat-free yogurt 1/4 cup Kraft fat-free mayonnaise 1/4 cup water Spray 4 (10 oz) custard cups with butter-flavored cooking spray. In a small bowl, combine reserved pineapple liquid and Brown Sugar Twin. Evenly spoon about 1 tablespoon juice mixture into each custard cup. Place 1 slice of pineapple in each and arrange a maraschino cherry half in center of each ring, cut side up. In a medium bowl, combine baking mix, Sugar Twin, yogurt, mayonnaise and water. Evenly spoon batter over pineapple slices. Place in a circle on a microwavable plate. Microwave on high (100 percent power) for 5 or 6 minutes, turning after 3 minutes. Let set for 5 minutes. Using a knife, cut around sides of cakes to loosen. Turn each cake onto a dessert dish, maraschino cherry-side up. Continue to cool about 5 minutes before serving.
