Guest guest Posted July 18, 2004 Report Share Posted July 18, 2004 Refrigerator Corn Relish 2 cups fresh corn (4 ears) or 1 (10-ounce) package frozen whole-kernel corn 1/2 cup vinegar 1/3 cup cold water 1 tablespoon cornstarch 1/4 cup chopped onion 1/4 cup chopped celery 1/4 cup chopped green or red bell pepper 2 tablespoons chopped pimiento 1 teaspoon ground turmeric 1/2 teaspoon salt 1/2 teaspoon dry mustard 1/4 cup Equal® Spoonful* Cook corn in boiling water 5 to 7 minutes or until crisp-tender; drain. Set aside. Combine vinegar, water and cornstarch in large saucepan; stir until cornstarch is dissolved. Add corn, onion, celery, pepper, pimiento, turmeric, salt and mustard. Bring to a boil, stirring frequently. Boil and stir 2 minutes. Remove from heat. Stir in Equal®. Cool. Refrigerate, covered, up to 2 weeks.
