Guest guest Posted July 14, 2004 Report Share Posted July 14, 2004 Diabetic Spinach Poppers can artichoke hearts, drained and chopped --- 15 oz pkg chopped spinach, thawed and drained --- 10 oz part-skim ricotta cheese 1 cup --- eggs, beaten 2 ea --- garlic clove, minced 1 ea --- minced red onion 1/4 cup --- minced fresh oregano 1/2 tsp --- shredded part-skim mozzarella cheese 1/4 cup --- Fresh ground pepper and salt to taste 1 dash --- Nonstick cooking spray 1 spray --- Preheat the oven to 350 degrees. Mix all ingredients together in a large bowl. Spray mini-muffin tins with nonstick cooking spray and fill with popper batter. Bake for 25 to 30 minutes, remove from the oven, and serve.
