Guest guest Posted June 23, 2004 Report Share Posted June 23, 2004 Torn Crouton Caesar Salad Serves 4 These croutons may be made 48 hours in advance, cooled, and stored in an airtight container at room temperature. 1/2 cup fat-free buttermilk 2 tbsp light mayonnaise 1/8 tsp garlic powder 1/4 tsp salt 1/4 tsp black pepper 2 oz french bread or whole wheat bread, torn gently into 1/2-inch pieces 4 cups pre-packaged mixed greens 1-1/2 tbsp grated parmesan cheese Heat oven to 350 deg F. In a small mixing bowl, whisk together the buttermilk, mayonnaise, garlic powder, salt, and pepper. Cover with plastic wrap and refrigerate at least one hour to thicken slightly. Meanwhile, place bread pieces on baking sheet and bake 12 minutes or until lightly golden. Remove from heat and cool completely. Place mixed greens in a salad bowl, add dressing and cheese, and toss gently, yet thoroughly. Add croutons, toss, and serve.
