Guest guest Posted May 19, 2004 Report Share Posted May 19, 2004 I was told when I went through the Diabetic Nutrition class that winter squash was NOT something that diabetics should eat, as they are very high in both sugar and starch, two things which we should minimize in our diets. I try never to send a recipe without it.
