I learned the trick from my daughter, the chef who doesn't have time to cook. The secret is to curl your fingers backwards and allow the knife to sort of rest against your knuckles. This keeps your finger tips away from the blade. The movement of the knife is shallow. Don't lift it more than necessary to get the cut you want.
