If this is made up on a weekend, the leftovers could be eaten for lunches during the week. This is suitable for P1. Donna Adobe Roasted Chicken 1 whole chicken, or cut up 1/4 c lime juice 2 Tbsp garlic salt 1 Tbsp olive oil 1/2 tsp pepper 1/2 tsp oregano 1/2 tsp cumin Combine all ingredients except chicken. Rub mixture onto meat and inside cavity (if using whole chicken). Place chicken in lightly-greased 9x13 pan, breast side up. Roast 60 to 70 min. (for a whole chicken; less time for chicken pieces) at 400* until done. Can also be used with boneless, skinless breasts, chopped up after cooking, then serve on lettuce w/ranch dressing.
