Guest guest Posted February 2, 2006 Report Share Posted February 2, 2006 South Beach Bread Pudding 2 cups skim or 1% milk 1/4 C margarine 2 eggs, slightly beaten 1/2 C Splenda 1/2 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp salt 6 cups dry WW bread cubes (8 slices) Heat oven to 350 degrees. Heat milk and margarine over medium heat until margarine is melted and milk is scalded. Mis eggs, sugar, cinnamon, nutmeg and salt in a 4 QT bowl; stir in bread cubes. Stir in milk mixture; pour into ungreased 1 1/2 Qt casserole. Place casserole in pan of very hot water 1 inch deep. Bake uncovered until knife inserted 1 inch from edge of casserole comes out clean, 40 to 45 minutes. Serve warm and if desired, with FF cool whip or 1/4 cup of Edy's NSA vanilla ice cream. I am not sure what the nutritional values are for this; but I eat 1 cup and that counts for my bread serving AND my sweet 75 for the day. Other Favorite desserts 1 cup of SF jello with dollop of FF cool whip. 1 cup of SF pudding with dollop of FF cool whip. 1/2 cup sliced fresh strawberries and dollop of SF cool whip. Mug of NSA Swiss Miss Cocoa with dollop of FF cool whip or TBP of Malibu Davinci. Try buying a bottle of DaVinci SF Syrups when you can. I have accumulated about 4 bottles now. (I found you can buy them at Borders book store MUCH cheaper than the grocery store). Try adding a tsp first then adding more if you liked it. Try adding it to different things like NSA cocoa, coffee, skim milk, NSA added Edy's Ice Cream, plain yogurt, fruit. Also found for Phase 2. I HATE Merlot! But by adding 1/2 Diet Sprite or Seirra Mist, I love it! I think my forte' seems to be finding a way to eat what I want, while still being SBD compliant. I keep trying different desserts and tweaking favorite recipes to satify my cravings! Same with eating out. If I start feeling I am losing out, thats my down fall. I am not going to quit but I will walk that line and bend the rules to my advantage, with out breaking them. Here's to a wonderful new way of life!
