If you can have limited Whole Wheat Tortilas in Phase 2, why not take two, cut them and bake them in the oven @350 for about 20 - 30 minutes...or until they are crisp enough for you? As for the salsa, I make canned salsa every year and in the winter I use fresh made from store bought produce. All I do is cut (or use a low powered food processor - my favorite is hand powered) Tomatoes, onlions, green peppers and, if wanted, a fresh chili pepper. (I am allregic to Jalapenios.) Mix together with Cilantro and let sit 30 mintues. This lets the flavors blend well. You can use this salsa for a dressing on eggs, even in Phase 1. It also makes good veggy dip. This is basically the same recipe I use for my canned salsa as well. It may change a bit from year to year, but I have never used sugar or a sugar substitute in it.
