I absolutely love Indian food but I'm having difficulty finding

recipes that don't use Ghee Butter, cook everything in oil, (usually

vegetable or peanut), sugar/brown sugar, coconut milk and cream.

I could substitute cream with Fat Free Half and Half but I don't

think I can use Olive Oil without changing the taste of the food. And

I have no idea how to replace Ghee butter or whether Splenda will

work in place of the sugar...and, of course, coconut milk is way too sweet.

So I'm looking for ideas for substitutions as well as any Indian

recipes that don't require any of this. Maybe some creative way of

using Indian spices, a sweetner (Splenda?), fat free half and half to

sprucen up some meals.

Thoughts?
