The colors and flavors are wonderful any time of the year. SERVES: 4 Copyright 1999 by The Junior League of Pasadena 1/4 c butter 1 med onion, finely chopped 2 (28-oz) cans tomato puree 1/4 tsp dried crumbled oregano 1/2 c half and half 1 (10-oz) package frozen chopped spinach, thawed and well-drained 1/4 c fresh chopped basil or 1 Tbsp dried, crumbled Salt and pepper to taste 1/2 c milk 1/2 c grated Parmesan cheese Melt butter in heavy large saucepan over medium-low heat. Add onion and saute until very tender, about 5 minutes. Stir in tomatoes, and oregano. Simmer 10 minutes. Mix in half and half, spinach and basil. Simmer 3 minutes longer.
