Donna,

Why do you say that? Aside from the taco/burrito shell/wraps, and recipes

with corn as a focus, the rest is very friendly. We eat Mexican around here

on occasion and have no problem with it. I even made a vegetarian version

recently (not vegan, mind you, but lacto-ovo vegetarian).

We go to Don Pablo's restaurant on occasion, and I either get the

grilled chicken and beans with veggies (instead of rice) or I get the

low carb fajitas. The grilled chicken has lime juice and pico de

gallo on it and is really good. And the beans aren't refried, just

regular beans.

And at Applebees, they have a Wt. Watchers menu with Tortilla Chicken

Melt made with a whole wheat tortilla. That is really good, too.

But I had to give up Taco Bell, which means I had to give up free

food, since my son is a manager there.
