I wanted to give you an update on the Spinach Quiche I put together

last night for DH and DD breakfast this morning. It was a HUGE

HIT!! Everyone loved it! I have to admit, it's pretty darned good!

It had a full rich flavor and texture and adding the Parmesan cheese

made it a standout in my book.

leftover low fat sausage patties, about 5 oz (pre-cooked weight) of

steamed spinach and about 1/3 cup of grated Parmesan cheese. I then

added enough fat free half & half to bring it up to 4 cups. I poured

it into the pie plate that had been sprayed with cooking spray and

baked at 350 degrees for about 45 minutes. Oh!! It smelled so

good! I had to sneak a taste to make sure it was edible for DH. It

was great! I cut it into 4 servings. Quiche freezes very well

either mixed and not baked or baked. I'll let you know what DH

thinks about it.
