Guest guest Posted January 3, 2006 Report Share Posted January 3, 2006 I wanted to give you an update on the Spinach Quiche I put together last night for DH and DD breakfast this morning. It was a HUGE HIT!! Everyone loved it! I have to admit, it's pretty darned good! It had a full rich flavor and texture and adding the Parmesan cheese made it a standout in my book. Donna > > DH likes to take breakfast to work with him and he's not a big veggie eater. So, I had to come up with a creative idea to help him get his morning veggies. Here's my quiche creation. > > My pie plate holds 4 cups. So, using my 4-cup measuring cup, I added 8 eggs, salt & pepper, 3 chopped green onions, 2 chopped leftover low fat sausage patties, about 5 oz (pre-cooked weight) of steamed spinach and about 1/3 cup of grated Parmesan cheese. I then added enough fat free half & half to bring it up to 4 cups. I poured it into the pie plate that had been sprayed with cooking spray and baked at 350 degrees for about 45 minutes. Oh!! It smelled so good! I had to sneak a taste to make sure it was edible for DH. It was great! I cut it into 4 servings. Quiche freezes very well either mixed and not baked or baked. I'll let you know what DH thinks about it. > > Be sure to take your measurements when you start SBD, because often we see our clothes getting looser when the scale stays the same.
