I've had days like that, where I'm so tired I can't think straight, let alone be creative and come up with something wonderful for dinner. I smeared homemade pesto (from the freezer from last summer's crop of basil) onto some Orange Roughy fillets. Put them under the broiler and cooked until done. It was so wonderful, and QUICK! We had baked sweet potatoes and steamed broccoli too. I steamed enough broccoli so that I could have some with my lunch today, after it marinated in my favorite balsamic vinaigrette dressing. Our Albertson's had an 8-hour sale yesterday and had fresh chicken quarters (leg and thigh) for 29 cents per pound. I normally buy only chicken breasts, but at that price, I felt I couldn't turn it down. I bought 20 pounds. I also bought 10 pounds of tilipa fillets for $1.99 a pound. I think I'll come up with different marinades for the chicken and freeze 4 pieces (in each freezer bag) in the marinade. That will help me when I can't think of what to do with the quarters, it will already be done for me. We like Teriyaki and Chinese food, so I'll probably do several freezer bags with those spices and ingredients. Dry rubs will also work. I think we'll have Korean Chicken Thighs for dinner tonight with stir- fried veggies and brown rice. The recipe is in the group files. Tomorrow, we're having Taco Salad, without the Chili-flavored Frito's for me. I love beans in my salad, so I'll go overboard on those! As Ray says, " Yum-O! In my freezer I have some shrimp (which works for Lent) and some frozen green beans. I have fresh broccoli, celery and red pepper and in my pantry I probably have some water chestnuts. Any ideas? I'm braindead at this point. It's sounding like a stirfry. With those specs, I'd definitely say a stir fry would be the easiest route to go. Maybe sprinkle some shredded mozzarella over top for a little added flavor. You could also do a pasta primavera as well -- crack a can of crushed tomatoes, add some onion & garlic, few bits from the spice cabinet; steam the veggies; cook the shrimp; toss it all with a little linguini.
