We had it this week and it was delicious, that even my hubby who hates spinach and tomatoes liked it. Baby spinach with grape tomatoes and mushrooms 2 cups sliced mushrooms 1 Tbsp. olive oil 1 bag (5 oz.) baby spinach leaves 1 cup halved grape tomatoes 1/4 tsp. garlic powder 1 Tbsp. Grated Parmesan Cheese Cook mushrooms in hot oil in large skillet on medium-high heat 3 minutes. Add spinach, tomatoes and garlic powder; mix well. Cook an additional 3 minutes or until spinach is wilted and mushrooms are tender. SPOON spinach mixture onto plates. Sprinkle with cheese. ann > > I have discovered I love spinach.
