But, once every couple months, I just have to have it. Feel free to ask if you want any more recipes. Low-Fat Two-Cheese Enchiladas 1 cup salsa, divided 1 1/2 cups lowfat cottage cheese 1 cup shredded reduced fat cheddar cheese, divided 1/4 cup scallions, sliced 1/4 tsp dried oregano 8 whole wheat tortillas, warmed Preheat oven to 375 degrees. Spread 1/4 cup salsa in 12 X 8 inch baking dish. Combine cottage cheese, 1/2 cup cheddar cheese, scallions and oregano Fill each tortilla with 1/4 cup cheese mixture in center of each tortilla and roll up. Place seam side down over salsa. Top with remaining 1/2 cup cheddar cheese and 3/4 cup salsa. Cover and bake for 20-25 minutes. ann > > Can you give me the receipe for the cheese enchiladas you are making?? I have one of those " meat & potato " husbands that thinks if there is no meat then it isnt dinner!! LOL He has actually done better then I thought about eating what I am fixing (he is a construction worker has NO weight issues at ALL make me sick!) and has been very supportive of me however he like his meat!!
