As for sweetness, there are a variety of sugar substitutes and everyone has a personal favorite. Undoubtedly I will run contrary to advice of those here into completely natural foods and flavorings. Those, actually, are my preference. But you're asking for substitutes, and seem fine with the fat-free half and half, so I took the liberty of suggesting our techno-age replicas at the risk of offending the tastes of some. Take it only for what it is. If you want REAL Indian, substitutes will never work. I could substitute cream with Fat Free Half and Half but I don't think I can use Olive Oil without changing the taste of the food. And I have no idea how to replace Ghee butter or whether Splenda will work in place of the sugar...and, of course, coconut milk is way too sweet. So I'm looking for ideas for substitutions as well as any Indian recipes that don't require any of this.
