Hm, I think they may have been a little like rice noodles in

chewiness. The angel hair moreso than the fettucini. They also make

it with and without soy. The noodles with soy had a few more

calories, but not many. I didn't think the addition of soy made a big

difference in their taste. I think the width of the noodles seemed to

make a bigger difference.

I guess you'll know how well you like them sometime next week! I

can't wait to hear what you think, or if you come up with an

interesting way to use them.

I also made a noodle kugel with them that was mostly eggs, splenda,

cinnamon and milk. I just took a standard kugel recipe and

substituted shirataki for the egg noodle and splenda for the sugar.

Another tip I just remembered. They're usually really long. While I

have them in the strainer being rinsed, I take a pair of kitchen

scissors and cut them up a little shorter.

I'm betting as more of us demand them, more stores will start

carrying them. I asked my local health food store but they kinda

dropped the ball. It could be that none of their suppliers carry

shirataki so they'd have to find a special source. I guess it's not

so bad to mail order them but the shipping's a little pricey since

they come packed in fluid and they're heavy. I bought mine from

konjacfoods.com.

I know what you mean. I lost 28 lbs LC on Atkins and I'm eternally

grateful. I missed my fruit, milk and even oatmeal, so I switched as well.

I'm going grocery shopping for some SB friendly recipes.
