If you read Sugar Busters, Atkins or any of the other low carb books they go into detail about the insulin reactions and effects in our bodies. Something that I did several years ago lowered my cholesterol count by 60 points and gave me an HDL of 70....avoiding all partially hydrogenated oils. Which means avoiding almost all commercially prepared baked goods...which keeps me away from simple carbs. I use only olive oil or real butter for cooking, no trans fats. I eat as much of these fats as I want, as well as salmon, filet of beef and cheese. My total cholesterol is 143 and my triglycerides are 67. Stress and heredity are supposed to be significant factors as well, however both my parents have very high cholesterol...eating sugar and wesson oil for all they're worth. I work in a hospital lab and we have had to turn people away because they forget and have their morning coffee with creamer before coming in.
