MB Zucchini Quiche 2 zucchini (or 1 big one) 2-3 cloves garlic diced onion - however much you like 12 eggs 1 c. cottage cheese 1/2 c. Parmesan cheese Preheat oven to 400. In skillet, saute zucchini, garlic, and onion in olive or canola oil. Mix eggs with cheeses, add vegetable mixture. Spray baking dish generously with olive oil Pam, bake 30 minutes until nice & golden brown on top and knife comes out clean.
