Guest guest
Prompted by recent discussion I decided to compare various corn products - especially baby corn and corn kernals. The http://www.nal.usda.gov/fnic/foodcomp/search/ site doesn't list baby corn, but the values for canned corn kernels - drained compare with values on cans in my supermarket. 100 gm drained canned sweet corn kernels yield 339kj and 18.59 g carbohydrate Different manufacturers gave similar values on cans. By contrast, 100 gm drained canned baby corn yields 105kj (about one third) and 3.7g carbohydrate So now, I feel more comfortable about adding 50g cur young baby corn to my Thai style evening meal, even though we don't have the GI/GL values. Thanks, Bea, for doing the legwork on this. Now I feel better about the times I've thrown some baby corn into my odd soup mixes. sky
