Guest guest Posted November 18, 2005 Report Share Posted November 18, 2005 This from D-life: Foods that have a high fat content (i.e., over 25 g), such as pizza, peanuts, and ice cream, can cause a delayed blood glucose spike. The fat in these foods slows the absorption of carbohydrates, which can result in normal levels two to three hours after eating and elevated blood glucose up to eight hours after.
