I made them for Christmas and had a whole house full of people who loved them and didn't know they were low carb. I get my low carb tortillas, " carb choppers, " from our local Sam's Club. I make cinnamon toast that way from the Arnold's low carb bread I also get from Sam's Club, so I use the tortillas when I want something a little more savory and crunchy, or something to eat with a dip. Guest guest Posted January 6, 2006 Report Share Posted January 6, 2006 Hi all, I assumed that because some tortillas were low carb that they wouldn't spike me. I was wrong. Boy was I disappointed!! Even low carb items can spike me, especially if they are made from corn or wheat. The tortilla put me over 200, although the meal consisted of one 7 " tortilla, two eggs and a spoonful of salsa. When I tried the eggs and salsa without the tortilla, they did not raise my bgs at all. Too many low carb things (not torillas but others) also have wheat gluten in them. I find a lot of those products actually make me spike more than regular ones. Always check ingredients and not just carbs.
