Sounds good! I wonder if cinnamon and Splenda would work?

I thought I'd pass along a snack idea I've been using lately (starting

Christmas Eve) for those of you who eat low carb tortillas. I have

been cutting them up into 8 wedges, brushing them with olive oil,

sprinkling with a rosemary garlic seasoning (but any favorite seasoning

would work) and laying them on a Pam-sprayed cookie sheet and baking at

high heat (450 on my oven) for a few minutes until they start to turn

brown and are crisp. I just watch them carefully until this happens.

They make great chips for eating alone or with low carb dips or

hummus. I made them for Christmas and had a whole house full of people

who loved them and didn't know they were low carb.

I get my low carb tortillas, " carb choppers, " from our local Sam's

Club. I buy in quantity and freeze the extra packs.

If you want them sweet, I'd probably bake them first, then brush

lightly with butter and sprinkle on the cinnamon and Splenda. I make

cinnamon toast that way from the Arnold's low carb bread I also get

from Sam's Club, so I use the tortillas when I want something a little

more savory and crunchy, or something to eat with a dip. I've also

sprinkled parmesan cheese on them.

Hi all,

I assumed that because some tortillas were low carb that they wouldn't spike

me. I was wrong. Boy was I disappointed!!

Even low carb items can spike me, especially if they are made from corn or

wheat. The tortilla put me over 200, although the meal consisted of one 7 "

tortilla, two eggs and a spoonful of salsa. When I tried the eggs and salsa

without the tortilla, they did not raise my bgs at all.

So, by all means try low-carb items, but test to see how they affect *you.*

You are right. It's not always about the carbs, it's the ingredients.

Too many low carb things (not torillas but others) also have wheat

gluten in them. I find a lot of those products actually make me spike

more than regular ones. Always check ingredients and not just carbs.

Lucky you checked.
