Brown Sugar Candy Balls

Hi,

I've made these for my 2.5 year old son with tactile defensiveness and

oral aversion. He started feeding himself on December 20th! Previously,

I had to spoon feed him and had to have a distraction in his hands that

kept his hands and mind busy. This is now one item that he has been able

to feed himself and has the " right " texture. We aren't doing the yeast

removal yet. (I have to get his weight up.) So for those of you looking

for calories and a way to get in protein or other powders such as calcium

this might help. It is an adaptation of the Tootsie Roll recipe that was

posted in October.

BROWN SUGAR CANDY BALLS

2 teaspoons of gfcf margarine

1 cup brown sugar

1/4 teaspoon vanilla

5 tablespoons rice protein powder

Liquid sweetener such as honey, corn syrup, etc.

Mix everything, except the sweetener, in a bowl with a hand mixer on low

speed. Start mixing in the sweetener a couple of tablespoons at a time.

(I don't measure, I just make a puddle that looks like enough.) Continue

adding sweetener a couple of tablespoons at a time, beating it in with a

mixer. (I'm guessing that I use somewhere around six to eight tablespoons

of honey.) When the crumbs look moist I form into balls a little smaller

than a walnut. I have to work the crumbs for each ball about 30 seconds

to get them to stick together. My son likes the balls best when they are

very soft, but, if you prefer, they firm-up nicely in the refrigerator.

If you make 28 balls from this batch, each will have 2.14 grams of

protein.

I use Vegetarian Rice Protein from NutriBiotic. I buy it at the HFS for

$16.95 for 1 lb. 5 oz. (600 g).
