Cooking is my craft, and not one that I am willing to part with yet, so having an outlet for my creativity is one of the best forms of support you can give me . . . Couscous Pudding - Core Program (6 servings) 1/2 cup dry couscous 3/4 cup scalded skim milk 1 pkg. instant FF/SF butterscotch pudding 2 cups skim milk 1) in a glass mixing bowl, pour the scalded milk over the couscous and stir. Let sit for a few minutes, until all the milk is soaked up. Fluff with a fork. 2) Make the butterscotch pudding according to package directions. Add the couscous and stir together well. Spoon into individual servings. (Nice with a dollop of FF Cool Whip.) I made this for my mid-morning snack, and it was yummy! Still have plenty sitting in the fridge for later. Reminiscent of rice puidding or tapioca pudding, but different. A special treat in it's own right! Hope someone else enjoys it, too . . .
