I am going to try it today, but I can never stick with the recipe, so I want to experiment. I know it's a staple in Italian cooking, so I wonder if a good italian seasoning would work in it, then pan fry the slices and top them with a chunky meat sauce? I don't think that's how they do it in Italy, but I'm looking for a replacement for pasta. Well, first to make the polenta and set it up. Then later I can decide about the topping, if it needs one. In fact the Polenta was ready made in a tube and was given to me by the Italian Minister of Science who works at the Embassy in Canada. We were camping next to them in Vancouver last month... anyway, to make a long story short, I tried the stuff and found it... well... lacking. Perhaps it is an acquired taste, because I haven't acquired one. Good luck. If you find something interesting then please share it. Polenta Does anyone here make polenta?
